Chicken Cacciatore

Ingredients - Allergies: SF, GF, DF, EF, NF

• 1 pound of chicken thighs, with skin on

• 1 Tbsp. extra virgin oil or oil

• Salt

• 1 small sliced onion

• 1/4 cup red wine

• 1 sliced red or green bell pepper

• 2 ounces sliced cremini mushrooms

• 1 sliced garlic cloves

• 1 cup peeled and chopped tomatoes

• 1/2 tsp. ground black pepper

• 1/2 tsp. dry oregano

• 1/2 tsp. dry thyme

• 1/2 sprig fresh rosemary

• 1/2 tbsp. fresh parsley

Instructions

Pat the chicken on all sides with salt. Heat the olive oil in a skillet on medium. Brown few chicken pieces skin side down in the pan (don't overcrowd) for 5 minutes, then turn. Set aside. Make sure you have 1 tbsp. of the rendered fat left.

Add the onions, mushrooms and bell peppers to the pan. Increase the heat to medium high. Cook until the onions are tender, stirring, about 10 minutes. Add the garlic and cook a minute more.

Add the wine. Scrape up any browned bits and simmer until the wine is reduced by half. Add the tomatoes, pepper, oregano, thyme and a tsp. of salt. Simmer uncovered for maybe 5 more minutes. Put the chicken pieces on top of the tomatoes, skin side up. Lower the heat. Cover the skillet with the lid slightly ajar.
